Sofrito is the base.
Onion, pepper, garlic, herbs — cooked down before anything else goes in the pot. You don’t taste it as itself. You taste everything it made possible.
Nobody makes it the same way. Puerto Rican, Dominican, Cuban, Spanish, Filipino — every version is different, and every version is correct, because each one is built from what that place grows and what that family remembers. It is a foundation without a fixed recipe.
That’s the right idea for what we do.
Every food business has its own ingredients: its people, its numbers, its routines, its regulars, its hard-won knowledge of what actually sells on a Tuesday. There is no universal formula underneath a good one. But there is always a foundation — and in most independent businesses that foundation lives in one person’s head, unwritten, and the business cannot run a week without them.
We build that foundation where you can see it. It starts with the money: what you spent, where it leaked, what to do about it this week. The name is personal. Our founder is Caribbean, and in that kitchen sofrito isn’t an ingredient, it’s the thing you make first, on Sunday, enough for the week.
