This week's leak is food - the check leads with the first of these.

Call your Broadline Foods rep about the chicken thigh price

Chicken thighs went from $1.92 to $2.38 a pound this week (+24%). Across the 128 lb you bought, that's about $59 — and $120-$180 over the next two weeks if it holds.

What to ask on the call

  • Pull up the June 30 invoice - the line is "BNLS CHIX THIGH 40LB" at $2.38/lb.
  • Ask: is this a market move, or did our negotiated price lapse?
  • If it's the market: ask when they expect it to ease, and ask for a 4-week fixed price so it can't creep further.
  • If it's your pricing: ask them to honor $1.92 or match Crosstown Provisions at $2.19/lb - mention you're pricing the order out.
  • Ask for whatever they agree to in writing on the next invoice, not just on the phone.

Message for your Broadline Foods rep

Hi - on our June 30 invoice, boneless chicken thighs came in at $2.38/lb, up from $1.92 the past few weeks. That's a 24% jump on our highest-volume item. Is this a market move or did our pricing lapse? We're seeing $2.19 elsewhere. Can you call me before Thursday's order so we can sort it out?

Labor moves

1 of 4

Labor matched the plan this week - these are the moves that trim it anyway.

Open Sunday with one fewer person

Sunday did $990 in sales on 40 scheduled hours - 64.6% of sales went to labor against a 28% target, and just $24.75 of sales per labor hour, the worst of the week. One fewer opener is 4 hours: $64 a week, about $256 a month.

How to run it

  • Post next week with one fewer opener on Sunday - the first 4 hours.
  • Move Sunday's prep list to the night before so two people can open clean.
  • Keep one call-in name on the schedule in case it pops.
  • Check next week's check: Sunday labor should land around 58% instead of 64.6%.

Message for your manager

Hey team - Sunday has been our slowest day. Next Sunday, let's open with one fewer person for the first four hours and lean on Saturday's prep. If sales pick up, call someone in.

Keep an eye on

Not a leak yet

Shredded cheddar

It's been creeping up a little. Not a leak yet, but worth watching on nachos and melts.

Quick heads up - cheddar edged up a little this week. Let's keep portions tight on nachos and melts until it settles.
