What to ask on the call
- →Pull up the June 30 invoice - the line is "BNLS CHIX THIGH 40LB" at $2.38/lb.
- →Ask: is this a market move, or did our negotiated price lapse?
- →If it's the market: ask when they expect it to ease, and ask for a 4-week fixed price so it can't creep further.
- →If it's your pricing: ask them to honor $1.92 or match Crosstown Provisions at $2.19/lb - mention you're pricing the order out.
- →Ask for whatever they agree to in writing on the next invoice, not just on the phone.

Open Sunday with one fewer person
Sunday did $990 in sales on 40 scheduled hours - 64.6% of sales went to labor against a 28% target, and just $24.75 of sales per labor hour, the worst of the week. One fewer opener is 4 hours: $64 a week, about $256 a month.

- →Keep one call-in name on the schedule in case it pops.
